Last year my husband and I visited my sister in law in Hungary. She showed us around Budapest, Gyor, and Veszprem. We also got a flavor tour of different pastries, soups, and Hungarian dishes that you cannot get in the states. Her roommate taught us to make a Hungarian meal and dessert. This is the meal.

The dish is called rakott krumpli (which I can hardly pronounce right). It is a traditional Hungarian dish similar to a casserole. It is tasty and easy to make. The recipe we made here is close to what we had in Hungary, but as Anna told us this is something people make all the time, so you can change it up to fit your taste or substitute for whatever you have available. We made it as close as possible to Anna's recipe (made tricky by language and country differences), because it is tasty.

3-4 Potatoes boiled whole and cut in slices
6-7 hard boiled eggs
1 spicy sausage (I used pepperoni)
1 Kielbasa
Sour cream
Salt and pepper
2-3 different kinds of cheese (something smoky or sharp and then something mild like mozzarella)

Boil the potatoes, make sure they're covered in water; you'll know they're done when you can easily stick a fork through them. If they're not quite done that's ok, we're going to be baking them. After they're cooled, cut them into slices. You can peel or leave skins on, whatever your preference.

Boil the eggs for about 10 minutes, then cool them with cold tap water and ice cubes; this makes them easier to peel. Peel the eggs and rinse  to make sure you got all the egg shells off. Cut them into slices.

When we had this dish in Hungary we used two different types of sausages, one was similar to a pepperoni and the other was similar to a hot dog, but neither was an exact match. I used pepperoni, because I figured it would be close to what we actually had. I was able to find a kielbasa flavored with paprika (a common flavor in Hungary) as the other sausage, it ended up being close to what we made in Hungary. Since this dish is layered we cut the sausages into slices.

Again when we made this dish in Hungary we weren't sure what cheeses we were using. One had a smokey flavor and the other was similar to a mozzarella. For this dish I ended up using a sharp white cheddar, mozzarella, and Parmesan.

Grate the cheese. Add salt and pepper and your cheeses to the sour cream. Save some cheese to the side for the top.


In a 9 by 13 pan put some of the sour cream mixture on the bottom, then add a layer of potatoes, sausage, eggs, and sour cream mixture. I found that adding the sour cream after a layer of potatoes was easiest. Finish by topping the dish with sour cream and grated cheese.

Cook at 350 for 25-30 minutes. The cheese on top should be a golden brown.

  1. Put potatoes in a large pot. Cover with water and boil. When done let cool and cut into slices.
  2. Boil eggs for 10 min., then cool in cold tap water and ice cubes. Peal, rinse, and cut into slices.
  3. Cut sausages into slices and grate cheese.
  4. Combine sour cream, salt, pepper, and most of the cheese.
  5. In a 9 by 13 pan put layers of sour cream, potatoes, sausage, eggs, then sour cream, repeat. Finish by topping with sour cream and cheese.
  6. Cook at 350 degrees Fahrenheit for 25-30 min., until the cheese is golden brown.
